Banana Chip Pancakes (GF)
Preheat griddle to 350 degrees F
Mix dry ingredients together and set aside
1 C Gluten Free Oat Flour (or substitute ⅓ C Almond Flour)
1 tsp. Baking Powder
1 Pinch Salt
Mix wet ingredients and fold into dry ingredients
2 Ripe Bananas (Mashed)
4 Eggs (Room Temp)
½ C Dark Chocolate Mini Chips
100% Organic Maple Syrup
Step 1: Preheat griddle to 350 degrees F
Step 2: Mix dry ingredients and set aside.
Step 3: Mix wet ingredients well. Begin to add dry ingredient mixture slowly to the wet mixture.
Step 4: Mix Chocolate Chips into the batter.
Step 5: Heat 1 Tbsp. coconut oil, butter or vegan butter on griddle. Pour ¼ cup portions onto the griddle.
Step 6: Cook pancakes until the sides dry a bit and top bubbles (1-2 minute). Flip pancakes until underside is golden (about 1-2 minutes).
Step 7: Remove from the griddle and serve with maple syrup.
Step 8: ENJOY!
Store leftovers in an airtight container in the refrigerator for up to 3 days or up to 3 months in the freezer.
