Chocolate Dipped Stuffed Dates

12 Fresh Medjool Dates (pitted)
100% Organic Peanut Butter (or nut butter of choice)
2 C Chopped Peanuts
Chocolate Coating
1 C Hu Dark Chocolate Chips
1 TBSP Coconut Oil
Step 1: Line a cookie sheet with parchment.
Step 2:Â Pit the dates, fill with peanut butter or nut butter of choice, and place them on the cookie sheet.
Step 3: Mix Chocolate and coconut oil and place on a double boiler on the cooktop.
Step 4: Once the chocolate mixture is smooth, remove from heat.
Step 5: Place peanuts in a baggie and use a rolling pin to crush them. Place the crushed peanuts in a swallow bowl next to the melted chocolate.
Step 5: Dip each stuffed date into the melted chocolate and roll into crushed peanuts.
Step 6: Return the coated dates to the sheet and let set in the freezer.
Step 6: Enjoy!
NOTE: Store in a freezer container. Best when consumed chilled or frozen.
