Cranberry Crumble Bars



1 ½  C GF Rolled Oats

1 C Almond Flour

¼ tsp. Salt

⅔ C Dark Coconut Sugar

½ Coconut Oil

1 tsp. Cinnamon

1 12 oz Package of Fresh Cranberries

1 C 100% Orange Juice

¼ C 100% Pure Maple Syrup

1 tsp. 100% Vanilla Extract

1 tsp. Arrowroot


Step 1: Preheat Oven to 350 degrees F.

Step 2: Combine Oats, almond flour, salt, sugar, cinnamon. 

Step 3: Add in coconut oil. Knead by hand to form a crumb mixture.

Step 4: Press ⅔ mixture into an 8 X 8 pan lined with parchment. Bake for 10-12 minutes until lightly browned.

Step 6: Remove from the oven. 

Step 7: Make the cranberry jam filling. Heat cranberries, OJ, and maple syrup  under medium heat for about 10 minutes until berries have popped. Add arrowroot and cook for another 3-5 minutes until mixture is slightly thickened. Add vanilla and mix.

Step 8: Pour jam over crust and sprinkle the remaining crumble mixture evenly over jam.

Step 9: Bake for 25 minutes, remove from the oven and allow to cool completely before cutting and serving.

Step 10: Enjoy!

Note: Store in an airtight container for up to a week in the fridge, or freeze for 2-3 months.
