Dark Chocolate Caramel and Pecan Bars


Ingredients for Crust

1 ½ C  Almond Flour

2 Tbsp water

3 Tbsp. Coconut Oil (melted)

¼ C Coconut Sugar

½  tsp. Salt

Caramel Pecan Filling

½  C Cashew Butter

½  tsp. Salt

⅔ C Water

1 tsp. 100% Pure Vanilla Extract

⅓ C Coconut Sugar

1 C Pecans (chopped)

For the Dark Chocolate Topping

8 oz HU Dark Chocolate

1 Tbsp Coconut Oil


Step 1: Preheat oven to 350 Degrees F

Step 2: Mix crust ingredients in a bowl. Line an 8 X 8 pan with parchment. Press the crust down into the bottom of the pan to cover the bottom evenly. 

Step 3: Prepare the caramel pecan filling. Add all the ingredients to a sauce pan and heat on low heat until the mixture begins to bubble, whisking continuously. Remove from heat and allow to cool. Once cooled, stir the pecans into the filling mixture.

Step 4: Pour the pecan caramel over the prepared crust. Bake the bars for 20 minutes or until the caramel begins to set.Remove from the oven and allow the bars to cool on the stovetop.

Step 5: Prepare the chocolate topping. Add the dark chocolate and coconut oil to a small saucepan and heat it over low heat until the chocolate is completely melted. Stir frequently. Allow the chocolate to cool for several minutes before pouring it over the caramel pecan layer. Smooth it out with a spatula.

Step 6: Place the bars in the refrigerator to chill until the chocolate layer is set and hardened. (about 30 minutes).

Step 7: Remove the bars from the fridge and slice into 16 squares. Serve immediately or store in the fridge until serving.
