Healthy Peanut Butter Cups
1½ Tbsp. Coconut Flour
4 oz Dark Chocolate Chips
1 Tbsp. Coconut Oil
3 Tbsp. Peanut Butter (or your favorite nut butter)
In microwave safe bowl, heat for 30 seconds at a time ¾ Tbs. oil and 2 oz of chocolate chips. Mix well and spoon into 6 small cupcake holders. Place in the freezer until set (about 5 minutes).
Mix peanut butter and coconut flour together and spoon until the set chocolate. Place in the freezer until set (about 5 minutes).
Heat the remaining coconut oil and chips. Spoon onto the chilled peanut butter mixture. Sprinkle with some sea salt or pink Himalayan salt and place back into the freezer until set.
Once these are set they can be stored in the refrigerator.
