Mandel Bread (GF)

Ingredients

¾  C Coconut Sugar

3 Eggs

¾ C Coconut Oil

1 tsp. 100% Pure Vanilla Extract

3 C Gluten-Free Oat Flour

1 tsp. Baking Powder

½ C Hu Dark Chocolate Chips

1 tsp. Ground Cinnamon


Instructions


Step 1: Preheat the oven to 350 degrees. Line a large baking sheet with parchment paper.


Step 2: In a large bowl, mix  sugar, eggs, oil, and vanilla together.


Step 3: Mix in flour, baking powder. Fold the dark chocolate chips into the mixture.


Step 4: Divide the dough in half and form 2 loaves (10 to 12 inches long and 3 inches wide) on the baking sheet. Sprinkle with cinnamon.


Step 5: Bake for about 30 minutes, until golden.


Step 6: Remove from the oven and slice them into 1-inch wide cookies and turn them on their sides on a baking sheet.


Step 7: Return the baking sheet to the oven and bake for 10 minutes. Flip over to the other side and bake for another 10 minutes. All sides should be golden.


Step 8: Allow the cookies to cool for a few then 


Step 9: Enjoy!


Notes: Store in airtight container for 5 days or freezer for 2 months
