Pear and Gorgonzola Salad (GF)

Ingredients

3 C Mixed Baby Greens

2 Small Pears, Washed and Thinly Sliced

¼ C Gorgonzola Cheese, Crumbled

¼ C Pecans Halves

¼ C Dried Cranberries


Dressing

3 Tbsp. Olive Oil

1 Tbsp. Balsamic Vinegar or Red Wine Vinegar

1 tsp. Honey

½ tsp. Dijon Mustard

Pinch of Salt/Pepper

Mixed Baby Greens are most nutrient dense when they are red or darker green. These dark greens are loaded with vitamin A for eye health, immunity, growth and reproduction. Pecans are a great source of heart-healthy monounsaturated and polyunsaturated fat that helps lower LDL cholesterol. They are high in fiber which promotes regularity and are a great source of calcium, magnesium, and potassium which helps lower blood pressure and maintain heart-heart.


Gorgonzola is a great source of vitamins B2, B6, B12 which are important for the nervous system and the immune system.
