Pecan Apple Squash Casserole
Preheat oven to 350 Degrees F
Mix dry ingredients in separate bowl and set aside
4 C Butternut Squash (Cubed)
4 C Sweet & Tart Apples (Peeled, Cored and Sliced)
1 C Pecans (halved)
2 Tbsp. Coconut Oil
2 tsp. Cinnamon
2 Tbsp. Brown Coconut Sugar
Step 1: Heat oil on medium heat in a saucepan. Add squash, cover and saute for 8-10 minutes until tender. Add apples and cinnamon. Cover and saute for an additional 5 minutes.
Step 2: Remove mixture from heat.
Step 3: Pour mixture into a casserole dish and top with pecans.
Step 4: Bake at 350 F for 30 minutes.
