Pesto Noodles
Ingredients
1 package GF Pasta
1 Tbsp. Olive Oil
1/4 C Cashews
¼ C Pine Nuts
Sauce
¼ C Olive Oil
3 Tbsp Nutritional Yeast
1 tsp. Salt
3 Garlic Cloves
1 C Basil (Fresh)
1 C Spinach
¼ C Water
1 Tbsp. Lemon Juice
1 C Parmesan Cheese
Step 1: Cook Pasta according to package instructions, drain and set aside.
Step 2: add 1 Tbls. Olive Oil to medium skillet. Under low heat, toast pine nuts and cashews to a light golden color. Watch closely, as they burn very quickly. Set aside in a separate bowl.
Step 3: Place all of the sauce ingredients in a blender or food processor. Do not overdo it. Pulse until pureed.
Step 4: Add puree to the skillet and warm with a medium heat. Add the cooked pasta. Use tongs to toss and coat the pasta.
Step 5: Top with toasted nuts and a little parmesan cheese. Serve.
Step 6: Enjoy!
NOTE: Feel free to add a protein: cooked shrimp, chicken, scallops, etc.
