Pumpkin Cake with Cream Cheese Frosting


Preheat oven to 350 Degrees F


Mix dry ingredients in separate bowl and set aside

1 C Almond Flour

1 C Coconut Flour  

2 tsp. Baking Powder

1 tsp. Pumpkin Pie Spice

1 tsp. Kosher Salt

Mix wet ingredients in a separate bowl

⅓ C Avocado or Coconut Oil

2 Large Eggs

1 C Pumpkin Puree

½  C 100 % Pure Maple Syrup

1 tsp. 100% Pure Vanilla Extract

Cream Cheese Frosting

8 oz Cream Cheese, softened to room temperature

¼ C Vanilla Greek Yogurt (I used 2%) or your favorite version

¼ C 100 % Pure Maple Syrup

1 tsp. Vanilla Extract


Step 1: Preheat oven to 350 degrees F.

Step 2: Mix dry ingredients and set aside.

Step 3: Mix wet ingredients and add to dry mixture.

Step 4: Line a 8X8 baking dish with parchment paper, spray with coconut oil and fill with mixture.

Step 5: Bake for 25 minutes until the center springs back and edges are golden. You will also see cracks in the cake. 

Step 6: Prepare frosting by mixing all ingredients together and set aside.

Step 7: Remove cake and allow to cool on a wire rack. Once cooled, frost the cake.

Step 8: Enjoy!
