Pumpkin Chip Scones (GF)
Preheat oven to 350 Degrees F
Mix dry ingredients in separate bowl and set aside
2 C Almond Flour
¼ C Tapioca Flour
¼ C Coconut Sugar
½ C Dark Chocolate Chips
1 Tbsp. Baking Powder
½ tsp. Salt
¼ tsp. Pumpkin Spice Mix
Mix wet ingredients in a separate bowl
½ C Pumpkin Puree
2 Tbsp. Coconut Oil
2 Tbsp. Powdered Coconut Sugar
1 tsp. Cinnamon
1 Tbsp.100% Pure Maple Syrup (or Substitute a Plant Based Milk)
Step 1: Preheat Oven to 350 F
Step 2: Mix all dry ingredients and set aside.
Step 3: Add wet ingredients to the dry mix until moist.
Step 4: Dough should be slightly sticky. Form a dough ball and place on the center of a cookie sheet lined with parchment. Press down and flatten the dough, slightly. Cut the dough in 4 pie cuts. Separate the pieces. Bake for 18-20 minutes. Cool.
Step 5: Once cooled, drizzle with icing.
