Pumpkin Spice Pancakes

Ingredients

Preheat griddle to 375 degrees


Mix dry ingredients together and set aside


1 C Almond Flour

2 tsp. Pumpkin Pie Spice

1 tsp. Baking Powder


Mix wet ingredients and fold into dry ingredients


½ C Pumpkin Puree

½ C Oat Milk

1-2 tsp. Vanilla

4 eggs


Heat a TBS of coconut oil on griddle and pour batter creating medium pancakes. When edges seem dry and top is a little bubbly, flip them.


On Cooktop, prepare the topping over low/medium heat until apples are softened


1 Tbs. Coconut Oil

1 Apple (peeling, cored and sliced or chopped)

¼ C Chopped Pecans

1 tsp. Cinnamon

½ tsp Pumpkin Pie Spice


Drizzle over pancakes before serving.

1 Tbs. Maple Syrup
