Strawberry Ice Cream (GF)
2 cup frozen strawberries
2 Tbsp honey
½ cup coconut sugar
1 Tbsp lemon juice
1 cup coconut cool whip (frozen)
½ cup full fat coconut milk (frozen in ice cube trays)
1 tsp vanilla extract
Step 1 Place coconut milk in ice cube trays and freeze overnight.
Step 2 Defrost the frozen strawberries and mash. If you prefer, mash fresh berries in a bowl.
Step 3 Combine the first 4 ingredients in a bowl, (strawberries, honey, lemon, coconut sugar), mix and set aside for 15-20 minutes.
Step 4 Use a blender to combine coconut frozen cool whip, frozen coconut milk cubes, and vanilla. Then add strawberry mixture and continue to blend until creamy consistency.
Step 6 Pour the mixture into ice cube trays and freeze overnight
Step 7 Remove the frozen cubes and blend to your desired consistency.
