Tzatiki-Mediterranean Cucumber Sauce (GF)

1 Medium or ¾ Large Cucumber
1 Garlic Clove
2 Tbsp. Lemon Juice
1 Tbsp. Olive Oil
2 tsp. Dill (Dried, Only)
1 C Greek Full Fat Greek Yogurt
1 Tbsp. Olive Oil
½ tsp. Kosher Salt
1 Pinch Black Pepper
Step 1: Peel the cucumber, slice lengthwise, scoop out the seeds.
Step 2: Grate the cucumber by hand with a box grater or use a food processor to grate.
Step 3: Allow the grated cucumber to drain off water in a strainer or use a cheesecloth to remove excess water.
Step 4: Place cucumber in a bowl and add garlic, lemon juice, yogurt, olive oil, salt and pepper. Add some water to get a creamy consistency.
NOTE:
Store in an airtight container and refrigerate for up to 1 week.
This is the perfect condiment for a grilled veggie platter, as a dip for falafel, on any sandwich needing a Mediterranean touch.
