Vegan Taco Night


2 C Chopped Peppers (Red, Orange, Yellow, and Green)

1 C Chopped Onions or 1 Medium Onion (any variety)

1 lb or 16 oz Vegan Ground Beef

2 Tbsp. Avocado Oil

2 Tbsp. Taco Seasoning or 1 Packet of Sista Taco Seasoning

Over medium heat, add oil, onions, and peppers. Simmer until soft and light brown on edges. Add the Vegan ground beef and taco seasoning. Simmer for about 3- 5 minutes. Shut heat off, cover and let sit for 5 minutes to allow the seasonings to absorb into the mixture.

Heat oven to 250 degrees and place corn taco shells (soft or crunchy) on a cookie sheet or  Taco Stand to heat for approximately 8 minutes. Remove shells from the oven and begin to build your tacos. You are gonna love them!

Toppings of Your Choice

Shredded Lettuce, sliced fresh tomato, fresh cilantro, sliced jalapeno, shredded jack or mexican cheese, guacamole, corn salsa, pico, salsa, sliced black olives, sour cream


This is a great mixture to create nachos, too! Place corn chips in a flat casserole pan, layer the taco mixture over the chips and top with cheese and toppings. Heat for approximately 8 minutes and serve.
