Autumn Squash Pasta


1 Box of Pasta

1 Yellow Onion (chopped)

1 Tbsp. Garlic (chopped)

2 Tbsp. Avocado Oil

1 Bunch of Asparagus (chopped)

1 C Butternut Squash (frozen)

½ C Veggie Broth

1 Tbsp. Salt

1 tsp. Pepper

1 tsp. Red Pepper Flake

2 tsp. Garlic Powder

1 tsp. Rosemary

1tsp. Thyme

1-2 Tbsp. Parmesan

¼ C Pine Nuts

Step 1: Boil the pasta, drain and set aside.

Step 2: In a saucepan, add oil, onion and garlic. Cook under medium heat until the onion is translucent. Bring to a simmer.

Step 3: Add in the asparagus and squash. Cover and simmer for 5 minutes.

Step 4: Season with salt, pepper, garlic, rosemary thyme

Step 5: Add pasta and toss.

Step 6: Top it off with parmesan and pine nuts

Step 7: ENJOY!
