Healthy Snicker Bars

Ingredients
Date Layer
1 C Medjool dates (soak in hot water for 10 minutes and drain)
3 Tbsp. Organic Peanut Butter
1 tsp. Vanilla Extract
Nougat Layer
1½ C GF Almond Flour
1½ Tbsp. Date Mixture
4 Tbsp. Organic Peanut Butter
Peanut Layer
½ C Organic Dry Roasted Peanuts
Chocolate Dip
1½ C Dark Chocolate Chips
2-3 tsp. Coconut Oil
Step 1: Line a loaf pan with parchment paper and set aside.
Step 2: Place dates, peanut butter, and vanilla in a food processor for a few minutes until pasty. Place the date mixture in a bowl and set aside.
Step 3: Place almond flour, 1½ Tbsp of date mixture, and peanut butter in the food processor and blend until a crumbly dough forms.
Step 4: Firmly press the dough into the bottom of the loaf pan to evenly cover the bottom.
Step 5: Evenly pour the date layer over the dough layer. Then top with peanuts. Lightly press the peanuts into the dates.
Step 6: Place the loaf pan into the freezer and allow it to harden for at least an hour (or overnight).Â
Step 7: Once set, remove the loaf pan from the freezer and pull up on the parchment paper, setting the bars on a cutting board. Cut to the size you want (bars or bit sized).
Step 8: Melt the chocolate and oil in the microwave (mix every 30 seconds) or double boiler until well combined.
Step 9: Dip each bit or bar into the chocolate to coat completely and set each piece on parchment to cool.
Step 10: Place the back in the freezer for about 10 minutes to cool and set.
