Vegetable Chili


2 Medium Organic Sweet Potatoes (peeled and cubed)

1 Tbsp. Olive Oil

1 Medium Yellow Onion (chopped)

1 Medium Bell Pepper  (chopped) 

1 C Mushroom (fresh and chopped) 

1 Zucchini (cubed)

1 Can of Corn (optional)

1lb Ground Turkey or Chicken (optional)

1 Can Crushed Tomato 

1 Can Bean Trio (undrained) 

1 Can Cannellini Beans (drained)

1 Packet of Siete Taco Seasoning  


½ Avocado (sliced)

Siete Tortilla Chips or Whole Foods Market, Tortilla Chips Organic White Corn

Dalup of Plain Greek Yogurt (Optional)

Chopped Cilantro 

Shredded Pepper Jack Cheese or Follow Your Heart (a great vegan choice)

Step 1: Add 1 Tbls. olive oil to a large sauce pot. Under low heat, saute onions, peppers, zucchini and mushrooms until softened.


Step 2: Add the sweet potato and meat (optional). If adding meat, saute until browned.

Step 3: Add remaining ingredients (corn, crushed tomato, beans and seasoning.

Step 4: Bring chili to a slight bubble and lower the heat to simmer for 15 minutes or longer (the longer you leave it will be).

Step 5: Ladle into a bowl and garnish with a few chips, a slice of avocado or yogurt.

Step 6: Enjoy
