White Chicken Chili for Crockpot

Ingredients

1 Small Yellow Onion , diced

2 Cloves Garlic, finely minced

2 (14.5 oz) Cans Chicken Broth

1 (7 oz) Can Diced Green Chilies

1 ½  tsp Cumin

½  tsp Dried Oregano

1 tsp Chili Powder

½  tsp Ground Coriander

½  tsp Red Pepper Flakes

1 Can White Corn (or frozen)

1 Can Yellow Corn (or frozen)

3 (15 oz) Cans Cannellini Beans 

2-3 Chicken Breasts


Garnish (optional)

Cilantro

green onions

Jalapenos

Avocado slices

Tortilla chips or strips

MontereyJack Cheese

Dallap of Plain Greek Yogurt


Step 1: Add to Crockpot: onion, garlic, chicken broth, chilies, beans, corn, chicken broth, and seasoning.

Step 2: Set on high for 1 hour and turn to low for 3 or more hours.

Step 3: Remove 1 cup of beans and place in a food processor with a little broth and puree until smooth. Add back into the soup to add some thickness.

Step 4: Remove chicken breasts and shred using two folks. Add back into the soup.

Step 5: Ladle into bowls, garnish and Enjoy!
